Vin Santo was a precious wine offered only to the most important guests and continues to be produced in the cellars of Fattoria Montecchio according to tradition.
During manual harvesting in wooden boxes, the most intact bunches of white grapes are selected and transported to the winery, where they undergo a slow drying process on racks inside naturally ventilated rooms for about 3 months. After delicate pressing of the grapes thus obtained, the must is left to age in small oak barrels-the traditional “caratelli” – for at least 5 years.
